Peanut Salad

Ingredients:
  • Boiled peanuts- 1 cup
  • Cucumber- 1 medium, finely chopped
  • Onion- 1 small, finely chopped
  • Tomato- 1 medium, finely chopped
  • Green chilies- 1 big, finely chopped
  • Coriander leaves- a small handful, roughly chopped
  • Salt- 3/4 tsp
  • Black pepper powder- 1/2 tsp
  • Lemon juice- 1 tsp


Method:
  1. I used shell peanuts, but you can use the normal ones as well. Just soak them in water for half an our before boiling. 
  2. Just cool the peanuts add the chopped cucumber, onion, tomato, slat, pepper powder and mix well.
  3. Squeeze half a lemon and mix again. Now finish with chopped coriander leaves. 
  4. Let it sit for 5-10 minutes and enjoy as snack.
